Beef veggie Soup

Prep Time: 25 minutes

Cook Time: 6 hours

Serves: 12 servings

Ingredients

2 lbs. (cut into 1 inch cubes and pat dry) stew meat

4 (cut into 1/2" cubes) bacon slices

32 oz. (low-sodium) beef broth

2 tbsps red wine vinegar

1/4 cup (cut into 1" pieces) green beans

1 (chopped) medium yellow onion

1/4 cup (diced) carrots

1 (diced) small celeriac

1 (28 oz.) can diced tomatoes

2 tbsps tomato paste

1/2 tsp tarragon, dried

2 crushed garlic cloves

1/2 tsp freshly ground black pepper

1/2 tsp oregano, dried

1 tsp sea salt

Preparation

1. Add bacon into a big skillet over med-high heat.

2. Stir cook bacon until crisp.

3. Use a slotted spoon to move bacon to a plate lined with paper towel.

4. Cover the plate with bacon and place in a refrigerator until needed.

5. Get rid of excess fat from the skillet, retaining only 1 tbsp bacon fat.

6. Work in batches, add few pieces of the cubed beef into the same skillet over med-high heat.

7. Lightly sprinkle pepper and salt over beef cubes.

8. Lightly cook cubed beef until all sides are evenly browned.

9. Use a slotted spoon to move browned beef cubes into a slow cooker pot.

10. Repeat process until no beef cube remains.

11. Add red wine vinegar into the same skillet over med-low heat.

12. Use a wooden spoon to stir up the vinegar mixture until every stuck browned bits of fat is loosened and cook until vinegar mixture is thicker.

13. Add 1/4 cup beef broth into the skillet and keep stirring until any stuck browned bit is completely loosened.

14. Pour the thickened vinegar mixture into slow cooker pot with the beef.

15. Add the pepper, salt, dried oregano, dried tarragon, garlic, diced tomatoes, tomato paste, carrots, celeriac, green beans, onion and the remaining beef broth into the slow cooker pot and stir lightly.

16. Secure the lid and cook for 6-8 hours on low.

17. Check seasoning and adjust as desired before you serve.

18. Serve, garnished with the remaining bacon bits.
